We make all our cheeses from raw cow’s milk from local producers in the Empordà, from the first milking in the early hours of the morning. The proximity of the producers allows us to minimise the changes in temperature of the milk, reducing energy consumption and more importantly giving the cheese an authentic taste.

We produce and mature our cheesess on our farm, using renewable energy sources. Milk from the same herd is used to make all our cheeses, using different techniques of curdling, cooking, acidification, salting, molding, pressing and maturing.
